Lobster: From Prison Food to Culinary Delicacy

Lobster is viewed as a culinary delicacy and usually carries a corresponding price tag.
But
it hasn't always been the case, in fact, lobster was at one time served in
prisons in the US.
This
short clip from Great Big Story explains the history of lobster consumption,
from the "cockroach of the sea" to the exalted status it holds today.
It's
a good example of how the perceived quality of an ingredient can evolve over
time.
